Fried Green Tomatoes from The Mt. Washington Tavern

2 medium green tomatoes (must be green)

1 egg whisked

cornmeal

3 oz lump crab meat

for the sauce:

1/3 cup shallot minced

zest of 1 lemon

2/3 cup lemon juice

1/3 cup white wine

1/4 cup white wine vinegar

1 1/4 cup unsalted butter

salt & pepper

Slice the tomatoes medium/thick. Dip in egg wash, and then dust with cornmeal.

Pan fry in a light oil.

To Make the lemon beurre blanc:

Put shallot, lemon zest and juice, white wine and white wine vinegar together in a pan and bring to a boil until it has reduced by 2/3. Turn down the heat and add a couple cubes of cold butter and whisk into reduction vigorously. Once fully incorporated, add a few more cubes of butter and whisk continuously until a smooth sauce forms. Butter must be added slowly and in stages. Continue to add butter, over low heat whisking until sauce is thick. Season to taste with salt and pepper.

Assemble:

Make a bed of greens, lay the slices of fried green tomato on the bed of greens. Top with 3 oz of Lump crab meat and then drizzle with the warm beurre blanc sauce!
